Last month I asked for your support of my rib entry in the semi-finals of the Smithfield Hog Wild Throwdown. Well, I have some bad news and some good news, and I'm a bad-news-first kinda guy, so... My ribs didn't make the finals, but the good news is that my Steakhouse Chops with Apple-Shallot Compound Butter entry in the final "Grill Pork Like a Steak" category has made the semi-finals in the Pitmaster Pro division. Beef Ribs On The Pit Barrel Cooker

This weekend I found some great beef back ribs at my local grocery store that weren't carved to near-meatlessness, as they typically are. Given that it was Memorial Day weekend, which demands grilling and/or barbecue, I loaded up the basket. Continue reading...My process for these was really simple. I hit them with a liberal coating of Kosmo's Q Texas Beef rub, followed by a good amount of freshly ground black pepper. For cooking I simply hung them in the Pit Barrel Cooker over a full basket of

A Look at Shou Pu-erh

FOOD AND DRINK : DRINK
Originally from Boston Teawrights - Explore the Art of Tea Craft. For most of its history, a teawright created pu-erh using the techniques to make sheng. But, the process is slow, and it takes many years for pu-erh tea to be crafted this way. As demand for pu-erh increased, many tea companies began to look for a way to speed up the process. So, in 1973, the Menghai Tea Factory and the Kunning Tea Factory devolved a method they called “Wo Dui”. This roughly means “wet piling” in English. The post
Pu-erh: An Introduction To China’s Fermented Tea

FOOD AND DRINK : DRINK
Originally from Boston Teawrights - Explore the Art of Tea Craft. Pu-erh is an aged tea that has its origins in the Yunnan province of China. This tea has been a popular drink and export from the province for hundreds of years. It’s cultivated from the wild tea trees (the Camellia Sinensis plant that all tea comes from) that grow on the mountains. Local teawrights craft the leaves, and then allow it to age for many years. It’s during this aging process that the leaves will undergo fermentation.
Oxidation, Fermentation, and Tea

FOOD AND DRINK : DRINK
Originally from Boston Teawrights - Explore the Art of Tea Craft. For much of its history, the oxidation process in tea crafting has been erroneously referred to as the “fermentation step”. This is because people assumed that the change of color in the leaves was the result of traditional fermentation. This is not the case, as fermentation requires microorganism, such as yeast. As advances in technology made it easier to study molecular chemistry, tea crafters were able to identify this process

The Hop City festival took place in Leeds at Easter. As part of the promotional run-up, host brewer Northern Monk brewed a collaboration beer with Cloudwater and hop supplier YCH called, imaginatively, Hop City IPA.It's squarely in the New England style, 6.2% ABV, 20 IBUs and a soupy yellow colour. The aroma is bright and fresh, throwing out juicy mandarin and spicy green rocket. In keeping with the style the body is soft and the carbonation low, making for some smooth and easy-going quaffing.Wh
